Ashley Davis is a chef born in Melbourne's west. After a brief stint in Sydney where he met the lovely Janine, the pair embarked on a long journey to Europe. Originally from Germany, Janine traded in the steins and preztels for the UK where the pair spent the best part of a decade in London. This culminated in Ashley cooking at the helm of the 2 Michelin star Helene Darroze at the Connaught as head chef and Janine, a Sales Manager for The Savoy.
When did you open Copper Pot?
We opened Copper Pot Seddon in December 2015 so we will be 3 in December, it still feels like yesterday.
A foodies’ trip across Europe, we love it! What inspires your menu?
The time spent living, travelling and working in Europe has been something that we wanted to share with diners here in Melbourne, and more importantly in the west where Ashley grew up. We wanted to take what we loved about Europe and translate that here.
What is a typical day in the life of a restaurant owner?
It starts and finishes with the people and the produce. We connect great staff with great produce for our customers. Early starts and long hours go into creating a great dining experience and then we rinse and repeat, all of this wouldn't be possible without a supportive team and great producers.
Why did you decide to work with By the Numbers?
When you spend so much time immersed in your business, you need the right help with the administrative side of things.
